Slower Cooker Chicken Sloppy Joes

Tierney loves Sloppy Joes, not sure how or why but she does, the other kids.....not so much. However they all love chicken so I cant wait to give this Chicken Sloppy Joe recipe a shot.

3 pounds uncooked ground chicken or ground turkey
2 14 ounce jars pizza sauce
2 cups frozen (red, green, and yellow) peppers, thawed and chopped
1 14.5 ounce can diced tomoatoes
8 slices mozzarella or provolone cheese
8 hoagie rolls

To make:
Spray a large (enough) skillet with cooking spray. Heat to medium.
Add chicken/turkey and cook until no longer pink. Break apart.
In a 3-4 quart slow cooker, mix chicken/turkey, pizza sauce, undrained tomatoes, and veggies.
Cover and cook on low for 6-8 hours or high for 3 to 4 hours.
Slice hoagie rolls down the side or middle, place on broiler. Broil 3-4 inches from the heat for about 2 minutes.
Spoon chicken/turkey onto rolls. Cover with cheese and heat again until melted.
